Wood fired brick oven, but it takes a lot of energy (wood) to get to temp.

Purists say wood fired brick oven but I say just use all imported ingredients from italy and you can cook it any way that is practical. Do not use any product of this country and only from Italy. Costs a lot, but tastes best. They have real pepperoni, real cheese, real sausage, etc WE in the US do not we short cut everything.

    By far wood fired brick.
If your looking for convenience; I use my gas oven & a pizza stone.
(16″ x 16″ x 3/4″) I lack the wood smoked flavor but; Crust is perfect.

you can get a good result by buying a slab of marble slightly larger than a pizza and put it into the oven at its highest setting to pre-heat. turn the oven down to about 180 degrees c add pizza on marble and it comes out perfect in 10 – 12 mins
